Tasting Note: A dry, textural Chenin from a single parcel, fermented and aged without topping up (non ouillé). Expect aromas of bruised orchard fruit, hay, toasted nuts and beeswax. The palate is saline, nutty and gently oxidative, with great length and a savoury, gastronomic character. A Loire Chenin with Jura spirit — expressive, distinctive and seriously food-friendly.

Background: Sourced from a parcel just west of Saint-Lambert-du-Lattay, this wine is fermented in barrel with native yeasts and aged under a veil of oxygen for 15 months without topping up. This deliberate oxidative élevage gives the wine a singular identity, echoing styles more commonly found in the Jura or Jerez, while remaining deeply rooted in its Anjou terroir.

Serving: Cool but not too chilled — around 12°C is ideal. Let it breathe in glass or carafe to open fully.
