Tasting Note: Stylistically this tastes like a pét nat with a lovely frothy mousse and lots of floral aromatic fruit. It is gorgeously light and we've discovered is the perfect match with fresh goat's cheese and quince paste. Utterly unique and extremely quaffable!
Background: A cross between a wine and a beer - the Mousses Sauvages from Oronce de Beler are high-fermentation beers assembled with 30% pressed Aligoté juice and aged for 9 months in barrels and foudres.
