From a single parcel where there is the naturally ocurring pink crystal, Aragonite. The wine is fermented and aged for 10 months in 600 litre demi-muids.

Tasting Note: An absolute favourite chez Emile, unbelievably complex with notes of roasted nuts, bergamot, apricot, lime blossom and preserved lemon. A glorious, unique wine that ages beautifully.
Background: From a single parcel of 40-80 year old vines. Aged in neutral oak with very little sulphur before bottling.
Serving: Cold - but not too cold! (10–12°C)/ Decant into decanter/jug/carafe for 30 minutes to 1 hour before drinking.
