Tasting Note: Textbook Chablis: wet-stone, sea spray, ripe citrus & toasted almond.
Background: Like Vincent Dauvissat, Laurent’s brother-in-law, all the wines are aged oak barrels (a tiny percentage is new) after fermentation in steel tanks. The provenance of the oak is mixed which adds complexity to these authentic, brilliant wines.
Serving: Cold - but not too cold! (10–12°C).
