Tasting Note: There is incredible depth and power yet subtlety and nuance that make us excited to see what this wine will become in many years to come. We love Chablis to be a bit ‘painful’ and this is a textbook example of that bracing vigour and energy that we don’t believe Chardonnay can obtain in any other region. Utterly sensational.
Background: Clos Béru is the flagship wine, coming from the château's Clos (walled vineyard) which is 300 m above sea level and on an outcrop of pure Kimmeridgian limestone bedrock.
Ageing is 18 months in demi-muids, then a year in casks and 6 months in bottle to tame the crazy intensity of this powerful, mineral, and complex wine.
Serving: Cold - but not too cold! (10–12°C).
