Tasting Note: An outstanding Chablis, from the oldest vines in Defaix's large Côte de Lechet holding. Intense and voluptuous with sea shell, lemon rind and fresh cream. The lees ageing gives texture and weight, and the precision is razor sharp. Exactly what Chablis should be.
Background: From 50 year old vines in the centre of this famous 1er cru. Just under half of this cuvée is aged in used oak.
Serving: Fridge cold to start and then enjoy as it slowly warms up
