Background: The grapes are pressed by foot and vinified in the classic Vignes du Maynes style with minimal intervention and spontaneous semi-carbonic fermentation in wooden vats. Ageing is in barrel and bottled unfiltered, without adding sulphur.
Serving: Slightly chilled, cellar temp (12–15°C).
Decant into decanter/jug/carafe for 30 minutes to 1 hour before drinking.
