Tasting Note: One of the more refined and linear expressions from Devevey. A vibrant acidity and subtle chalky texture. Expect notes of ripe apple peel, jasmine, and yuzu, underscored by a persistent wet stone minerality. It feels very youthful with plenty of ageing potential. Could benefit from cellaring for another 2–5 years.
Background: Made from fully destemmed fruit and aged for 12 months in barrel. We recommend decanting before serving.
Serving: Serve chilled, but not too cold — ideally around 10–12°C.
