Domaine Vincent Dauvissat
Vincent Dauvissat is at the very top of the Chablis hierarchy and is one of France’s most celebrated vignerons.
The wines are all fermented in tanks before being transferred to oak barrels, no more than 10% new, with the lees.
Organic farming has been in place for decades and biodynamic farming methods have been utilised since 2002, though Vincent has no interest in being certified. The wines destined for the UK market are all bottled unfiltered.
