Background: The tiny 0.9 hectare Les Chassagnes site was purchased by Julien Guillot in 1999. It had not been farmed since phylloxera times in 2005 it was replanted with 0.5 hectares of Chardonnay, 0.3 hectares of Gamay and 0.12 hectares of Pinot Noir. The soil here has a thin surface on very firm limestone. Aging on the fine lees for 12 months in 600 litre wooden barrels . Like all of Julien's wines the vinification is done without the use of sulfur, at bottling is sulfurized once with 20 mg/L. Only 700 magnums are produced per year.
Serving: Cold - but not too cold! (10–12°C)/ Decant into decanter/jug/carafe for 30 minutes to 1 hour before drinking.
