Tasting Note: Fresh with lovely ripeness to the fruit which is citrus-driven with chalky minerality and green herbal notes.

Background: The family decided to use oak a number of years ago so as to best express their terroir and the purity of their fruit. That is so well placed in this cuvée which sees the grapes being gently pressed and being moved to tanks to ferment with their natural yeats. Following fermentation, the are left to rest on their fine lees in stainless steel.
