Tasting Note: Rich with ripe orchard fruit, white flowers and bright, fresh acidity. There is a complex, savoury character with flavours of brioche and caramel, like a very fine, maturing Champagne.

Background: From vineyards just outside the Aube in southern Champagne in the Châtillonnais region of the Côte d'Or, this technically is a Crémant de Bourgogne and is produced by Quentin Beaufort from the Champagne house of the same name (a continuation of the organic pioneer, Maison André Beaufort).

Serving: Cold - but not too cold! (10–12°C).
