Domaine Bernard Defaix

This highly regarded estate was founded by Bernard Defaix in 1959 with just 2 hectares. The domain is now run by the incredibly affable Helène and Didier Defaix alongside his brother Sylvain Defaix. They have worked on converting the estate to organics and have also introduced a number of biodynamic practices. The Defaixs are continuing to push the envelope and have been experimenting with sans soufre bottlings. The 2022 vintage is their first release and both wines are made in stainless steel with elévage on the fine lees. The resulting wines are incredibly clean, vibrant and showcase a marked salinity.
