Tasting Note: Vanilla bean, toasted cashew, lemon balm with salted citrus and fresh almond. Intense and vigorous - just exceptional wine. A Pouilly-Fuissé that is full of character, complexity and will age brilliantly.

Background: Ageing is in a mix of demi-muid and traditional pièce 228 litre barrels. Julien usually uses no sulphur during vinification of his whites, adding just 1 gram at bottling. 

Serving: Cold - but not too cold! (10–12°C).

Decant into decanter/jug/carafe for 30 minutes to 1 hour before drinking.
