Tasting Note: From 50+ year old vines in the village of Verzé. Full-bodied and long with a distinct salty character. Verzé is known for producing mineral wines and this combines that character with density and immense character. Wonderful stuff!
Background: Made in the Maillet style of long, cool fermentations, circa 9 months, in epoxy lined concrete tank. 40-50 mg of total sulphur.
Serving: Cold - but not too cold! (10–12°C).
