Tasting Note: Very unique, wild wine that tastes almost like a Geuze beer. Les Taille is the final pressing of the grapes so this has a deep red colour with savoury notes of bread red plums and dried flowers. The palate is full and very dry with fresh acidity. Utterly unique!
Background: From vineyards just outside the Aube in southern Champagne in the Châtillonnais region of the Côte d'Or, this technically is a Crémant de Bourgogne and is produced by Quentin Beaufort from the Champagne house of the same name (a continuation of the organic pioneer, Maison André Beaufort).
Serving: Cold - but not too cold! (10–12°C).
