Tasting Note: Brioche, orange peel, bitter almond and ripe peach. This is an incredibly complex wine with superb richness and racy acidity. 

Background: From vineyards just outside the Aube in southern Champagne in the Châtillonnais region of the Côte d'Or, this technically is a Crémant de Bourgogne and is produced by Quentin Beaufort from the Champagne house of the same name (a continuation of the organic pioneer, Maison André Beaufort).

Serving: Cold - but not too cold! (10–12°C).
