Tasting Note: There is in fact a small splash of César in this cuvée, adding some structure and body. This is a wine of finesse with notes of wild black cherry and a touch of florality.

Background: Irancy is an appellation for red wines only made from Pinot Noir, along with a maximum of 10% of native variety César added to the blend. Irancy has the same Kimmeridgian limestone soils as they have in Chablis.

Serving: Cellar temp (12- 15 °C).
