Region: Chablis, Burgundy

Grape: Chardonnay

Farming: Sustainable

Tasting Note: Rich and expansive and feeling more Côte d’Orian (a term we have borrowed from Vincent Dauvissat) than Chablis in style. This is glorious young with the fresh notes of lily and peach. With time the tension will increase and it will take on a more saline, oyster-shell, Chablis-like identity.

It is a wine that exudes finesse and is beautifully pure and high-toned, always elegant with just a hint of spice on the finish with excellent depth and intensity.

Background: Fourchaume is situated on the right bank on clayey, relatively deep soils. The vines are on average 40 years old and all from the Vaupulent sector.

For this cuvée there is always a larger percentage of oak - 45-50% (10% new)

Serving:  Cold - but not too cold! (10–12°C).
