Beaujolais Ultimatum Climat, 2018 | Mâconnais, Burgundy
Farming: Certified organic
Tasting Note: Fresh and lively with a gorgeous violet perfume and exotic spice notes. Ripe raspberry and blackberry fruit, graphite, earth and citrus. Sapid and creamy with a firm spine of acidity and a long, supple finish.
Background: This comes from a parcel in the southern Beaujolais called Les Pierres Bleues from vines over 100 years old, located in the commune of Bully on an ancient volcanic rift. The subsoil is limestone with sandy clay and dark blue metamorphic rocks which lends a strong salinity to the wine.
Serving: Slightly chilled, cellar temp (12–15°C).
Decant into decanter/jug/carafe for 30 minutes to 1 hour before drinking.
